OPERATION
CONTROLS
ON/OFF SWITCH
The cabinet is pre-set/programmed at the factory at a recommended temperature
of 165 F.
OPERATING INSTRUCTIONS
Once the cabinet has been properly
installed by competent service people,
cleaned, and connected to the
appropriate power source, the cabinet is
ready for operation.
TEMPERING:
At least 1 (one) hour prior to loading the
cabinet with the trays, plug the cabinet
into the proper electric outlet, and switch
the rocker switch to the ON position.
Allow the cabinet to run while the doors
remain closed. In 1 (one) hour, the
temperature inside should be 165.
( + / - 10 degrees ).
LOADING:
Insert bulk food trays onto supplied
shelves as quickly as possible, exposing
only small quantities to room
temperature for short periods of time.
Load the cabinet while it is running,
keeping the doors closed as much as
possible. When the cart is loaded, allow
the temperatures to recover for
approximately 10 minutes prior to
transporting cabinet.
UNLOADING:
Once cabinet has been transported,
plug the cabinet into an appropriate
electrical outlet. This will re-activate the
heating element and automatically hold
the temperature at 165. While the meal
trays are being distributed, keep the
door closed as much as possible.
At the completion of the meal service,
restack the trays within the cart, and
return the cabinet and trays to the
washing area.
The temperature in any
heated cabinet will fluctuate with
door opening and transportation.
The operator should always monitor
the food product to insure that it
remains at a proper temperature.
